Home Food Safety

The Centers for Disease Prevention and Control, or CDC, estimates that about 1 out of every 6 people in the U.S. get sick every year from foodborne diseases (CDC, 2018a). Of those people who get sick, roughly 128,000 are hospitalized and 3,000 die (CDC, 2018a). While the average healthy adult may survive foodborne illness, vulnerable people in high-risk groups may not. People in high-risk groups are more likely to be sick for a longer period of time, require hospitalization, and even die if they get a foodborne illness (Food and Drug Administration [FDA], 2020). Older adults are a vulnerable group that is most at risk.

You are responsible for following the principles of safe food handling any time that you prepare food for someone in their home. You must also teach the people you care for, their family, and other caregivers about safe food handling.

This course presents how you can reduce the risk for foodborne illness and help prevent it. You will learn about the causes of foodborne illness and precautions that you must take. The goal of this educational program is to provide general staff in home care settings with education about foodborne illness and how to prevent it.
